Ingredients

  • 16 slices bacon
  • 2 None ripe avocados, peeled and mashed
  • 1 None lemon, juiced
  • 1 splash Tabasco
  • 8 slices bread, crusts removed
  • 6 tbsp creme fraiche
  • 1 head baby Romaine lettuce

Method

  • Cook the bacon in a frying pan until crisp. Remove and drain on paper towels.
  • Season the mashed avocado with lemon juice and Tabasco. Spread 4 slices of bread with creme fraiche and guacamole. Arrange lettuce leaves and bacon on the guacamole and top with the remaining slices of bread. Cut the sandwiches diagonally and serve 2 per person.
